Soy LecithinLecithin obtained from soy is a complex mixture of phosphorus (see) containing lipids, of which the best known is phosphatidylcholine. Lecithin is an important structural part of cell membranes. Lecithin also helps to carry fat and cholesterol in the blood stream, and can act as an emulsifier to help dissolve fats and fat soluble vitamins. VitaMist® takes great care to ensure that the lecithin used in VitaMist® products is obtained from soy that has not been genetically modified.
